This honey, balsamic ground chicken dish fits both of those criteria. It is a perfect meal for busy families who are trying to live a healthy lifestyle. The balsamic, honey sauce brings out a tangy, but sweet flavor the entire family will love. Simmering the honey balsamic sauce with the chicken and brussels allows the sauce to thicken and flavors come together.

This lean, healthy meal is perfect paired with roasted sweet potatoes, mashed potatoes or even riced or mashed cauliflower for a low carb choice. Sprinkle with a little feta cheese for added flavor.

Ingredients

  • 2 tbsp. olive oil
  • 2 lbs. lean ground chicken
  • 1 small yellow onion, diced
  • 1 tbsp. minced garlic
  • 4 cups halved brussels sprouts
  • 2/3 cup balsamic vinegar
  • 1/3 cup honey
  • 3 tbsp. Dijon mustard
  • salt and pepper to taste
Instructions

Heat olive oil in a large skillet over medium high heat
Add Brussel's sprouts, onion, and garlic and sauté' for about 8-10 minutes or until tender
Add ground chicken and sauté' until cooked through (about 5 minutes)
Season chicken and brussels's sprouts mixture with salt and pepper
Whisk together the balsamic vinegar, honey and mustard and pour over chicken mixture
Turn heat down to medium low and allow to simmer for about 5 minutes or until sauce is slightly thickened
Tips
  • Sprinkle with feta cheese for added flavor
