Welp, this was the easiest thing ever.


I’d come across the Atkins cauliflower bites in the freezer section of my grocery store. They had parmesan flavored and bacon cheddar flavored and HOT DAMN they were so good.


Then one day, they disappeared.


Seriously, now I can’t find them anywhere and it was so depressing.


But, when a freezer door closes, a Vic Trick opens!


So behold, the easiest recipe ever: Vic’s Tricks To…Cauliflower Bites.


Preheat oven to 375°.


In honor of my own laziness, I used the bag of already-riced cauliflower that you can steam right in the bag. But, if you want, you can boil some cauliflower and put it in a food processor to rice it yourself.


Either way, you’re going to want to wring out as much of the water as possible. If you have a cheesecloth or thin tea towel, you can use that. Or…


Vic Trick: I didn’t have a cheesecloth handy, so put the cauliflower rice in a colander and just used some paper towels to absorb as much of the moisture I could.


Gotta do what you gotta do.


From there, mix in 1 egg and whatever other mix-ins you choose!


For these, I used bacon and cheddar. But parmesan and maybe a little garlic powder would also be really delicious here.

Mix it all together, then in a VERY WELL GREASED cupcake tin, pat down the mixture until it fills about 1/3 up the side of the tin.


I used a mini cupcake tin, which is ideal I think, but if you use a regular one that should be fine, you may just need to adjust times.


Bake in the oven for about 15-18 minutes or until the edges start to crisp up and the middle doesn’t seem soggy.

Vic Trick: Let these cool for at least 5 minutes until you try to take the bites out – when I tried too soon, they completely crumbled.


They came out soooo tasty and I’m so happy I can make these on my own instead of buying them. BINGO!

Ingredients

  • 1 head cauliflower, riced or 1 package riced cauliflower (I used frozen and cooked it in the microwave first)
  • 1 egg
  • 1/2 cup shredded cheese of your choice
  • Any other mix-in you’d like (I used bacon)
Instructions

Preheat oven to 375°.
Cook the cauliflower and use a cheesecloth wring out or paper towels to soak up as much water as possible.
Mix in the egg, cheese, and other mix-ins, then place into well-greased cupcake tin, filling about 1/3 the way.
Bake in the oven for about 15-18 minutes or until the edges start to crisp up and the middle doesn’t seem soggy.
Let these cool for at least 5 minutes until you try to take the bites out – when I tried too soon, they completely crumbled.
