Sweet Potato, Chicken and Kale Patties

Alternative patties to the usual beef patty have and are still pretty popular, so, what about a patty that's both a fried treat and pretty healthy.


If you want to make this recipe vegetarian or vegan, just sub out the meat with other vegetables, meat analogues, or nothing else at all.


The binding agent for this recipe is the potato starch, so actually eggs aren't necessary at all.


Try not to add too many fillers like corn or cabbage as it will affect the integrity of the patty, increasing the chances of it falling apart during the frying process, or even the shaping process.

Ingredients

  • 400g sweet potatoes, boiled, skinless and mashed
  • 2 tbsp water
  • 2 tsp potato starch
  • 50g minced chicken
  • 60g Kale leaves, chopped into small pieces
  • 20g corn
  • ½ medium onion, diced
  • ½ tsp chopped garlic
  • ½ tsp salt
  • 4 tsp cooking oil (divide into two)
Instructions

In a medium bowl, add the mashed sweet potatoes, then add water and cornstarch. Mix well.
In a frying pan, over a medium heat, add 2 tsp oil, chopped kale, minced chicken, corn, onion, garlic and salt, and stir fry until cooked. Remove from the stove and set aside for about 5 minutes.
Add the cooked ingredients into the mashed potates mixture and mix well.
Divide the mixture into 10 small patties.
In a frying pan, add 2 tsp oil and fry the patties until golden on both sides.
