If you are running out of things in the fridge, or looking for ways to use up going soft carrots or parsnips. The easiest and tastiest recipe - equally great as a brunch, lunch or dinner! I love making fritters at the moment, they are so delicious, easy to make, really cheap ingredients, but still feel like such a treat. Make a bunch of this for your friends or family for an easy but impressive meal! Feel free to add some toppings - a fried egg, some avocado or bacon if you eat me. They taste great with a mango chutney or yoghurt as a sauce!


Coarsely grate the parsnips and carrots

Mix with the rest of the ingredients

Spoon the batter into a hot, oiled frying pan

Cook for a couple minutes on each side and flip over

Ingredients

  • 1 Parsnip, grated
  • 1 Carrot, grated
  • 2 TBSP Flour
  • 1 Egg
  • 1 TSP Cumin
  • 1/2 TSP Salt
  • 1-2 TBSP Chopped Corriander
Instructions

Coarsely grate the carrot and parsnips into a bowl, then use a piece of muslin cloth or a sieve to squeeze out any excess liquid. If the vegetables seem dry already, then there's no need to do this.
Add the rest of the ingredients and mix together well.
Heat a frying pan over a medium heat with a small coating of oil, then spoon out the batter onto the pan. Cook for a couple minutes on each side until golden, then flip over and cook on the other side.
Serve immediately with your chosen toppings or sauce!
