Butternut Squash Patties

These are a super fun way to eat butternut squash this season and they are also low fat as they are cooked with no oil in the air fryer!


Each patty is only 2 Weight Watchers points, making it a diet-friendly option with a satisfyingly crispy top!


They are a different way to enjoy this seasonal vegetable and they are loved by big and small.


Also they are so versatile, because you can fill them with whatever you prefer! I filled mine with spinach, mushrooms and mozzarella but you can add your favourite ingredients! They would be great with ham and cheese too.

Ingredients

  • 1/2 butternut squash
  • 1/2 light mozzarella cheese ball
  • Handful mushrooms 
  • Handful spinach
  • 80gr breadcrumbs 
  • 1 egg
  • 1 tablespoon extra virgin olive oil 
Instructions

Begin by peeling the butternut squash and slicing it into rounds.
Boil the squash slices for 5-8 minutes until they become tender.
While the squash is cooking, sauté mushrooms with a dash of oil, salt, and paprika. Add spinach during the last few minutes of cooking.
Drain the butternut squash slices and assemble your patties. Place some sautéed mushrooms and spinach on one squash slice and add a slice of light mozzarella. Top it with another squash slice to form a patty.
Whisk an egg and dip each patty in the beaten egg, followed by a coating of breadcrumbs.
If you want to prepare your own breadcrumbs, I suggest to blend toasted bread with fresh rosemary in a food processor for an additional flavour.
Cook the patties in an air fryer at 180 degrees Celsius for approximately 10 minutes or until they turn crispy on top.
