Sweet-yet-tangy cherry tomatoes make a perfect side dish for lunch and dinner. I don’t think many people will agree with me when I say roasted cherry tomatoes taste delicious, whether raw or cooked.


My love for tomatoes has made me try different recipes made of tomatoes. And in my journey to taste the delicious food made of tomatoes, I have fallen in love with roasted cherry tomatoes.


I cannot get enough of the juicy taste of roasted cherry tomatoes, so usually, I prepare them for dinner or brunch. My friends and family want me to prepare this recipe for parties or to celebrate little occasions.

Flavorful Roasted Cherry Tomatoes Recipe

Honestly, if you search for a roasted cherry tomatoes recipe, you will come across several options. But I think mine is the best because


  1. a) it does not require you to put together tons of ingredients
  2. b) it gets ready in just thirty minutes.


While I have shared a couple of my family recipes, this classic recipe is not one of them. Instead, preparing something like this came when I was craving tomatoes but didn’t want to eat them raw. So, I gave them a twist by baking them and adding a handful of ingredients to bring out the flavors of the tomatoes.


I’m a huge fan of roasted vegetables, and my family also likes eating them as they are healthy. The bonus? You can use this roasted cherry tomato to prepare a few recipes to make your dish more flavorful.


Steps to Make Fresh Corn and Tomato Feta Salad

You need to follow the three steps listed below to prepare the roasted cherry tomatoes the right way.


Step One

You need to have perfect tomatoes for the preparation of this recipe. But what kind of tomatoes are best for this recipe? If you do not want to do much of the hard work, you can choose any tomatoes, but I recommend choosing more meaty cherry tomatoes. If you want to make your dish colorful, you can add a variety of tomatoes.


Once you have selected the tomatoes, you must wash them properly so your backed cherry tomatoes don’t taste muddy. After washing, you can either use the cherry tomatoes as whole or slice them in half; it’s totally up to you.


I usually cut the cherry tomatoes because I like how they taste after they are baked. They explode with flavors.

Here’s how you can quickly cut the cherry tomatoes into half. Transfer the cherry tomatoes into a place and sandwich them using a lid. Then use a knife to cut the tomatoes in half carefully. This way, you can cut 12-15 tomatoes at once.


Step Two

The next step includes adding flavor to your roasted cherry tomatoes. So, you need to combine 2 tablespoons of olive oil and one tablespoon of onion powder in a bowl. You need to mince 2 garlic cloves and then add them to the bowl. You must also add salt, pepper, and one tablespoon of dried oregano.

Once you combine all the spices, you can add halved cherry tomatoes to the bowl. Combine everything well, so all the tomatoes get a nice coat.


Step Three

The last step is baking the tomatoes. For this, you need a baking dish. Line a parchment paper on the dish so the tomatoes do not get a burnt taste. Transfer the tomatoes to the baking dish and bake it in an already heated oven at 180 degrees. Turn off the oven after 20 minutes.

Key Notes:

  • While roasting the cherry tomatoes, you will notice that tomatoes release juice. You can store the juice in a container and pour it on the roasted cherry tomatoes to get extra flavor.
  • Broil the cherry tomatoes after roasting if you want to get that smoky or charcoal flavor.
  • You can add more flavors to the roasted cherry tomatoes by adding sugar, red pepper flakes, rosemary, oregano, thyme, or any other spice. You can also add extra garlic to make your roasted cherry tomatoes taste better.


Are Roasted Cherry Tomatoes Good for Health?

Cherry tomatoes are good for your health, and you can eat them without any worry. They are loaded with vitamins and nutrients.

Avoid peeling when using cherry tomatoes for roasting because the skin tastes good. You can also avoid slicing them to save yourself from extra work.


What Type of Tomatoes is Good for Roasting?

If you do not get cherry tomatoes, you can replace them with any pasting tomatoes. But you must not use slicing tomatoes.


Can I Store Roasted Cherry Tomatoes?

The best thing about roasted cherry tomatoes is that you can store them for four months. Use a freezer-safe bag so the taste of roasted cherry tomatoes is not spoiled.

Ingredients

  • 1/2 lb cherry tomatoes halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 teaspoon onion powder
  • 2 minced garlic cloves

Instructions

Place the cherry tomatoes, olive oil, salt and pepper to taste, onion powder, minced garlic cloves, and dried oregano in a large bowl.
Mix everything until combined and transfer to a baking dish lined with parchment paper.
Bake in an already heated oven at 350 F or 180 C degrees for about 20 minutes.
Serve and enjoy.

    I'm going to try this for sure, I have two huge cherry tomato plants, one at home and one up north at our lake property. This sounds like a great way to use them up and make a great appetizer on garlic bread! Thank you! I bet it would be amazing over pasta as well. 😊

    My mother always made this.......tomato wedges, sliced onions, virgin olive oil, oregano: tossed - no cooking. We just called it "Italian salad". BTW my mother was Sicilian. Enjoy it whichever way you choose to eat it! Mangia!!!
