Twice Baked Sweet Potatoes

This twice-baked sweet potato recipe is an easy and healthy breakfast recipe that fills you up and satisfies your taste buds!

All you really need for this twice-baked sweet potato recipe is a cooked sweet potato, some crumbled bacon, eggs, and green onions. 

The only time-consuming part is cooking the sweet potato. You can do that in the microwave if you want, although I prefer them in the oven. 

Bake sweet potatoes until tender. Cut in half, fluff with a fork, and add on bacon and egg.

Chop your green onions while you wait for the sweet potatoes to bake for the second time.

Top with green onions and give it a sprinkle of salt and pepper!


This is a great dish for Easter or Christmas brunch, especially for people who have certain food allergies or dietary restrictions.
