Sweet Potato Bunnies

Easter is right around the corner and if sweet potatoes make an appearance on your buffet or dinner, instead of baked, mashed or casserole, try bunnies!

These are crispy on the outside and creamy in the inside, not to mention the cutest thing on the table!

Slice potatoes the long way in 1/2 inch slices

Use a bunny cookie cutter or free hand it with a paring knife like I did

place on parchment lined baking sheet and brush generously with olive oil

Add spices to your liking, I found salt and pepper was enough

Place in 400 degree preheated oven for 20 minutes or until you see the edges getting crispy!

  • Sweet potatoes washed
  • olive oil for coating
  • salt and pepper

Preheat oven to 400 degrees, place bunny cutouts on parchment paper lined baking sheet, brush generously with olive oil, salt and pepper and bake for 20 minutes.
