Stuffed Sweet Potato

Sweet potatoes are so versatile and can be used in sweet or savory dishes. I opted for savory this day and put together an elevated baked sweet potato by stuffing it with other items from my fridge. You can work with what you have and swap out the chicken for tofu or beans, change the type of cheese, or whatever you feel like!


I stuffed this one with leftover shredded chicken and guacamole then topped it with cilantro, Greek yogurt, feta cheese, and chili flakes. Cook the potato within minutes using the microwave instead of the oven. Oven can be used too if preferred!

Ingredients

  • 1 sweet potato
  • 1 chicken breast, precooked & shredded
  • 2 tbsp fine diced red or white onion
  • 1/4 cup taco sauce of choice
  • 1 avocado
  • 1 lime
  • 1/4 tsp coarse salt
  • Greek yogurt or sour cream to serve (optional)
  • cilantro to garnish (optional)
  • feta cheese to garnish (optional)
  • chili flakes to garnish (optional)
Instructions

Poke holes in the potato using a fork then cook on high for approximately 5 minutes in the microwave until soft
Smash one avocado with juice from one lime, fine diced onion, and salt
Heat and mix the shredded chicken breast with sauce of choice
Once the potato is cooked, slice in half the top with the guacamole and shredded chicken
Garnish with feta, sour cream, cilantro, and chili flakes
