30 minute meals are a must in my house and this super easy yet INCREDIBLY tasty Thai turkey stir fry is a family favourite (and for a good reason!).
Lean ground turkey is the base. Next goes in a TON of fresh vegetables - really whatever you have got going on in the fridge which also makes this the perfect clean-out-your-fridge type of meal. All of this comes together with a super savoury and delicious sauce. I like to serve this over rice but also in lettuce wraps for some added veg and crunch. This keeps really well in the fridge for up to 3 days so it makes for some great left overs!

Ingredients
For the stir fry
- 1 lb ground turkey
- 2 Tbsp olive oil
- 1/2 cup diced white onion
- 2 cloved garlic, minced
- 1 Tbsp fresh ginger, minced
- 1 cup chopped carrots
- 1 cup chopped bell peppers
- 1 cup sliced mushrooms
- 1/2 cup sliced water chestnuts
- 1/4 cup cilantro
- 1/2 cup unsalted peanuts
For the sauce
- 1/2 cup low sodium soy sauce
- 2 Tbsp rice wine vinegar
- 2 Tbsp hoisin sauce
- 2 Tbsp brown sugar
- 1 Tbsp smooth peanut butter
- 1 Tbsp hot water
- 1 tsp sesame oil
- Juice of 1/2 a lime (about 1-2 Tbsp)
- 1 tsp garlic chili sauce (or as much heat as you'd like!)
Instructions
For the stir fry
- In a large frying pan, heat olive oil over medium high heat. Add in ground turkey and cook for 6-7 minutes or until almost cooked through.
- To the ground turkey, add in onion, garlic and ginger. Stir and mix together. Then add in carrots, bell peppers, mushrooms and water chestnuts. Cook over medium heat until tender, about 6-7 minutes more.
- Next, add in the sauce and stir to combine. Allow to heat through, about 5 minutes.
- Remove from the heat and serve hot over cooked rice or in lettuce wraps. Top with fresh cilantro and chopped peanuts. Enjoy!
For the sauce
- In a large glass measuring cup, add in sauce ingredients.
- Use a whisk to fully combine everything together into a smooth sauce.
- Add in any additional hot water until sauce reaches desired consistency.
