Poriyal is a South Indian coconut stir fry made with vegetables. You can also make this poriyal with other different vegetable like beets, okra, cabbage. It's quite a common side dish in South India.

Carrot Beans Poriyal is a South Indian dish where steamed carrots and beans are seasoned with mustard seeds, gram dal urad dal and curry leaves. To add extra flavour to the Poriyal, it can be garnished with grated coconut.


Green beans are rich in dietary fiber and carrot is good for eyes and skin. Both carrot and beans are rich in vitamins. This stir fry tastes best with rasam rice.

If you don't prefer onion, then skip it. Chop carrots & beans of uniform size. Before adding grated coconut make sure water is evaporated completely or else, the poriyal will not be dry.

Ingredients

  • 2 cup carrot chopped
  • 2 cup beans chopped
  • 3 tsp oil
  • 1/2 tsp mustard
  • 4 to 5 curry leaves
  • 1 dried red chilli
  • 1/2tsp chana dal
  • 1/2 tsp urad dal
  • 5 tbsp coconut grated
  • 3 tbsp onion finely chopped
  • 1/4 tsp turmeric powder
  • Salt as taste
  • 3 tbsp water
Instructions

In a large kadai heat oil and splutter mustard, curry leaves, chana dal, urad dal and dried red chilli.
Then add chopped onion and saute until onions is slightly pinkish.
Now add chopped carrot, beans, turmeric powder and salt as per taste.
Stir fry until spices are well combined & add water and mix well.
Cover with a lid and allow to cook for 15 minutes, or until vegetables are cooked well
Lastly add grated coconut and mix well.
Enjoy carrot beans poriyal with hot steamed rice or roti.
Tips
  • Onions can be skipped if you do not prefer.
  • Chop carrots & beans of uniform size.
  • Before adding grated coconut make sure water is evaporated completely or else, the poriyal will not be dry.
