Homemade black bean burgers with a jalapeño and rosemary infused vegetable quinoa


Everything made completely from scratch with fresh and healthy ingredients, I would deffo make this dish again whilst on the road, so it’s super easy for you to make at home.


I previously showed you my black bean burgers, and this combined with the flavoursome quinoa is an absolute summer evenings winner!


My burger recipe makes 5/6 burgers so use a couple with the quinoa and freeze the rest for another day!

Ingredients
For the quinoa
  • 1 cup of quinoa
  • 1/2 pepper cubed
  • One spring onion
  • 2 cubes of garlic 
  • 2 tbsp pickled jalapeños, 
  • 1/4 cup sweet corn
  • 1/2 veg stock cube
  • 1 tsp Rosemary 1/2 tsp oregano, 1/2 black pepper 
  • 1/2 lemon squeezed 
  • And I used some vegetables up.. cubed carrots and broccoli stems 
  • Some seeds of your choice: I used sesame
For the bean burgers
  • - 1 500g tin black beans
  • - 1 white onion
  • - 2 cloves of garlic
  • - 1 cup of panko bread crumbs
  • - 1 egg
  • - 1 tsp cumin
  • - 1 tsp oregano
  • - 1 tsp Smokey paprika 
Instructions
For the bean burgers
1. Finely chop your onion and garlic and soften in a frying pan for 5-10 mins
2. Meanwhile squish your black beans in a mixing bowl with the back of a fork.
3. Add to the bowl your crumbs, egg, spices and your softened onion.
4. Mix together and combine into 6 equal burgers.
5. Cook at 425f for 15 mins, flip half way through. You can also pan fry till brown. 
This makes 5/6 burgers so freeze some for another time!

Start chopping your veg: peppers cubes, spring onion diagonally sliced, garlic/jalapeño finely cut. And soften in a saucepan your garlic and peppers. Add in your herbs, cook for a couple minutes and leave till serving.
Meanwhile cook quinoa according to instructions. Add in stock cube and lemon juice just before the end. 
Add your vegetables too your quinoa. Now add in your fresh spring onion and Jalapeños and stir. Top with your black bean burger and ENJOY
