Have you ever purchased a butternut squash and wondered what to do with it?! One of the easiest ways to cook butternut squash is to roast it in the oven. One of the hardest things to do is prepare the butternut squash for roasting, but I have an easy trick for that. Ready?! Let’s do this!

First, I cut the butternut squash in half lengthwise. I then scoop out the seeds. Next I use a vegetable peeler to peel the hard outside skin/rind if the butternut squash. I then flip it over and start cutting half moon shapes. Ow cut the half moon shapes into cubes.

I put the cubed butternut squash into a bowl. Add the olive oil and seasoning. Toss to coat. On a foil lined cookie sheet, spread the butternut squash in an even layer.

Look at that beautifully roasted butternut squash. Roasting the butternut squash brings out its natural sugars. It is a beautiful vegetable to eat.

This is a delicious and quick side to add to any meal. You can also add more herbs and spices to make this your own. Enjoy!

Ingredients

  • 1 butternut squash
  • 3 Tbsp. olive oil
  • 1/2 tsp. garlic salt
  • 1/2 tsp. fresh ground black pepper
  • 1/4 tsp. onion powder
Instructions

Preheat oven to 425F. Line a cookie/baking sheet with foil.
I cut the butternut squash in half lengthwise. I then scoop out the seeds. Next I use a vegetable peeler to peel the hard outside skin/rind if the butternut squash. I then flip it over and start cutting half moon shapes. Now cut the half moon shapes into cubes.
Place the cubes into a bowl and add the remaining ingredients. Toss to coat. On a foil lined cookie sheet, spread the butternut squash in an even layer.
Place the butternut squash in the oven for 20-25 minutes until fork tender. Serve with your favorite main dish. Enjoy!
