Homemade Broccoli Casserole

Since Thanksgiving is right around the corner and will be here before you know it, it’s time to start thinking about what casseroles and side dishes and desserts you need to make for all of your family gatherings! One of my favorite recipes is this broccoli casserole that my mom and my Meme have been making for years! I love recipes that have been handed down from one generation to another! Not only is it delicious, but so easy to prepare and everyone will love it!

Here is everything you need to make this delicious side dish!

The first thing you need to do is cook the broccoli for about 20 minutes on medium heat, or just until tender.

While the broccoli is cooking, now is a good time to crush up the Ritz crackers. I usually just place about 2 sleeves of crackers in a freezer bag and then crush them into tiny pieces with a rolling pin.

Once broccoli is done cooking, mix broccoli with 1 can cream of mushroom soup, 2 eggs, 1 chopped onion, 1/2 cup of shredded cheddar cheese, and 1/4 cup of mayonnaise.

Here it is all mixed together!

Then place mixture in casserole dish and arrange crushed crackers on top. Next, pour the melted stick of butter all over the crushed crackers. Bake at 375 for about 30 minutes or until the cracker crumbs start to brown. Let cool for 10 minutes and then enjoy!

Ingredients

  • Fresh Broccoli
  • 2 eggs
  • 1 can cream of mushroom soup
  • 1 small onion
  • 1/2 cup shredded cheese
  • 1/4 cup mayonnaise
  • Ritz crackers
  • 1/2 cup (1 stick) of butter, melted
Instructions

Preheat oven to 375 degrees.
Cook broccoli over medium heat until tender, about 20 min.
Crush up two sleeves full of Ritz crackers.
Mix cooked broccoli, 1 can cream of mushroom soup, 2 eggs, 1 chopped onion, shredded cheddar cheese, and mayonnaise together in large bowl.
Once combined, pour mixture into casserole dish and top with crushed Ritz crackers.
Pour melted butter over dish.
Bake at 375 for about 30 min or until cracker crumbs turn golden brown.
Let cool for 10 min and enjoy!
Tips
  • You could also use crushed up Cheez-Its instead of Ritz crackers if you wanted. Both options are delicious!
