In the South, casseroles are a way of life. Chicken, broccoli, squash, green bean, pineapple, you name it. We can take pretty much any food, add some mayonnaise or sour cream, butter, and crackers to it, and turn it into a casserole.


The problem with this is that it often adds a ton of calories and fat to a perfectly healthy food. That is why I try to create lightened up casseroles for my family to enjoy.


This lightened up broccoli casserole is made with low fat Greek yogurt in place of sour cream, and contains 183 calories and 12g of fat per serving compared to 300 calories and 18g of fat per serving in the traditional broccoli casserole.


The best part is nobody could tell the difference. I hope you and your family will enjoy this lighter broccoli casserole option!

Ingredients

  • 12oz frozen, microwaveable broccoli
  • 3/4 cup shredded cheddar cheese
  • 1/4 cup shredded Parmesan cheese
  • 1/2 cup plain, non-fat Greek yogurt
  • 15 ritz crackers, crushed
  • 4 tbsp. Light butter, melted
  • Salt, pepper and garlic powder to taste
Instructions

Preheat oven to 350 degrees
Stream frozen broccoli in microwave according to package directions (about 4-5 minutes).
Mix broccoli, Greek yogurt, Parmesan cheese, and 1/2 of the cheddar cheese in a large bowl.
Season with salt, pepper, and garlic powder and mix well.
Pour mixture into a 9x9 casserole dish.
In a small bowl, mix crushed crackers, melted butter and remaining cheddar cheese. Sprinkle on top of broccoli mixture.
Bake for 25-30 minutes, until golden brown.
