Low Fat Cheesy Broccoli Casserole

This dish was born out of a desire to get more greens onto our plates in my house and make something that was quick, easy and more interesting than your usual steamed broccoli. It makes a great side dish, but with the added protein from the eggs and cottage cheese, you could even slice it up when cold and take it into work as an easy packed lunch. The basic recipe can be tweaked as desired with the addition of other vegetables, just be sure to blanch any hard vegetables in hot water and bake alongside the broccoli to soften them. You could also add a variety of herbs and spices. I personally liked to serve this along spicy chicken and smother with hot sauce!

Broccoli is mixed with scallions and cherry tomatoes.

Eggs mixed with cottage cheese gives the texture and saltiness to the dish.

The casserole is topped with parmesan cheese before being placed in the oven.

The finished dish is cooked until golden brown and set.

Ingredients

  • 5 1/2 cups broccoli florets
  • 8 spring onions (scallions), thinly sliced
  • 1 1/2 cups cherry tomatoes, quartered
  • 2 large eggs
  • 1 cup fat free/low fat cottage cheese
  • 3 cloves garlic, peeled and crushed
  • 1 cup grated low fat cheese, such as cheddar
Instructions

Preheat your oven to 430 degrees Fahrenheit.
Bring a large pan of lightly salted water to a boil, then add the broccoli and allow to cook for 3 minutes, then drain and set aside.
Tip the broccoli, along with the tomatoes and scallions into an oven-proof casserole dish and mix well.
Whisk the eggs along with the cottage cheese and garlic in a large bowl and season to taste with salt and pepper.
Pour the egg mixture on top of the broccoli and mix briefly to evenly distribute the eggs over the vegetables.
Sprinkle the grated cheese on top of the casserole.
Cook in the centre of the preheated oven for 15-20 minutes or until set and golden.
