One Pan Roasted Potatoes

These are the best potatoes I have ever made, seriously, soft on the inside and crisp on the outside. With just the right hints of seasonings. You could change up the seasonings you use to suit your preference very easily and they would still taste great. I can not wait to have fresh from the garden potatoes to make this recipe with.

I use small new potatoes or Yukon gold or small red potatoes. Either works just fine! I cut them in bite size pieces and make sure they are all about the same size. You don’t want some getting done before others.

I do all the mixing right on a parchment or aluminum foil covered sheet pan. I drizzle them with olive oil and then add the seasonings. Remember here you can be creative use whatever you like. I love garlic so I mince garlic and use onion powder, salt and pepper and a little pinch of red pepper flakes.


Toss all of this together then lay the 3 Tablespoons of butter cut up on top of the potatoes. I put them in a 400 degree oven for 40 minutes. I have grilled them the same way and it takes approximately 30 minutes on the grill.

When nice and crispy sprinkle with parsley to make it all look pretty.

3lbs potatoes, your choice


olive oil


1 T minced garlic


1/2 t onion powder


1/8 t Red pepper flakes


3 T butter


Parsley


Salt and pepper to taste
