I've made mashed potatoes more times than I can count, but I've never thought to add lemon. This one ingredients brought my potatoes to a whole new level. The lemon makes this typically heavy potato dish, light and fresher than ever. I served this with a saucy brisket and it went together so well. I will definitely be making this version again!

You can use any herbs you want, but I opted for parsley, scallions, and thyme. Mint would be a lovely addition too! After the photos, I mixed in all the herbs vs sitting them on top. For more yummy side dish ideas, follow my Instagram @tikofoods.

  • 3 tbsp olive oil

  • 1/4 cup cream

Slice the top of an entire bulb of garlic, drizzle the top with olive oil, then wrap it in tin foil

Strain the potatoes, returning them to the pot
Add all of the cloves of roasted garlic, olive oil, butter, cream, and lemon juice
Chop the herbs and add them in too
Mash the potatoes with a masher, then whip using a hand mixer or immersion blender for a fluffier texture
Season with salt and pepper to taste
Garnish with lemon zest and olive oil then enjoy!
