Have you ever wondered how restaurants make the most perfect potatoes? They are always perfectly browned, crispy on the outside and so creamy in the middle that they almost melt in your mouth.


Well, after several attempts and adjustments I have finally perfected my crispy skillet potatoes and I am ready to share my secrets. The best part about this recipe is that you don’t need any kind of fancy equipment, and only a few super basic ingredients. Once you taste one of these delicious potatoes you won’t believe that they didn’t come out of deep frier.

When cooking these scrumptious potatoes I like to use a combination of butter and olive oil. I find that this gives the potatoes the perfect flavor and browns them beautifully, without being heavy or greasy tasting.

So the next time that you have potatoes on the menu, why not give these a try. They make the best side for dinner, or are equally delicious served alongside a nice brunch.

The first thing you will need to do, is wash and peel 6-8 yellow potatoes. Of course you can adjust the number of potatoes you are using depending on how many people will be eating. I like to use yellow potatoes for this recipe as I find they crisp up beautifully but remain fluffy and creamy on the inside.

Next you want to melt 2 tbsp of butter and 3 tbsp of olive oil in a preheated cast iron skillet. The reason for using a cast iron skillet is that after the potatoes are browned they will be transferred to the oven to finish off cooking.

Once the butter has melted and the oil is hot, add in your potatoes and cook over medium high heat until most of the potatoes have browned on all sides. If the middle of the potatoes are still hard don’t worry, as they will finish cooking in the oven.

Place the browned potatoes in a preheated oven at 425 and continue cooking for an additional 10-15 minutes, or until the potatoes are cooked through. Remove from oven and season generously with salt.

Garnish with fresh parsley and enjoy!

Ingredients

  • 6-8 yellow potatoes
  • 2 tbsp butter
  • 3 tbsp olive oil
  • salt
  • fresh parsley
Instructions

Preheat oven to 425.
Peel, wash and dice potatoes.
Melt butter and olive oil in a cast iron skillet. When the skillet is hot add in the diced potatoes and cook over medium heat until the outsides have browned and are slightly crispy.
Transfer the skillet to the preheated oven and continue cooking the potatoes for an additional 10-15 minutes or until the potatoes are fully cooked.
Season with salt to taste and garnish with fresh parsley.
