If you are looking for the perfect potato side recipe this one is a winner. This has to be one of my favorite ways to enjoy potatoes.

Crispy Parmesan Roasted Potatoes are super easy to prepare and make the perfect side for just about any meal.

I like to use yellow potatoes for this recipe as the outsides get nice and crispy and the insides are so creamy.

After you make the parmesan garlic butter mixture you simply coat all of the potatoes with it, spread the potatoes out on a baking sheet and pop them in the oven.

I guarantee that if you make these Crispy Parmesan Roasted Potatoes, the whole family is sure to enjoy them and you will definitely be going back for seconds.

Peel and chop the potatoes. You can also use the small yellow potatoes for this recipe and leave the skins on ( I actually prefer them that way, but my kids don’t enjoy the skins).

Melt the butter in a glass measuring cup and then mix in olive oil, garlic, Parmesan, parsley and salt.

Toss the potatoes with the garlic Parmesan butter mixture until they are all evenly coated.

Arrange the potatoes on a baking sheet. Make sure they are spread out in a single layer so that all sides can get nice and crispy.

Bake for 45 minutes to an hour. I like to test the potatoes with a fork after about 40 minutes.

You can see how beautiful and crispy these potatoes are. The Parmesan adds a lovely flavor and crunch to this dish.

I like to sprinkle on some extra Parmesan just before serving.

I served these potatoes along side some roasted chicken and green beans. I baked the potatoes at the same time as the chicken which made this meal super simple to prepare!

Ingredients
Crispy Parmesan Roasted Potatoes
  • 6 medium yellow potatoes
  • 2 tbsp melted butter
  • 2 tbsp olive oil
  • 2 tbsp Parmesan cheese
  • 1 tsp minced garlic
  • 1 tsp parsley
  • 1/2 tsp salt
Instructions

Preheat oven to 375.
Peel and dice the potatoes, add them to a large bowl.
Melt 2 tbsp of butter. To the butter add 2 tbsp olive oil, 2 tbsp Parmesan cheese, 1 tsp minced garlic, 1 tsp parsley and 1/2 tsp salt. Whisk together to combine.
Pour the butter mixture over the potatoes and toss until everything is evenly coated.
Arrange the potatoes in a single layer on a baking sheet.
Bake for 45 minutes to an hour.
Garnish with some freshly grated Parmesan cheese before serving.

    Just trying to use something without using oil going with Dr John McDougall program he requires no oil so I think that means butter too but I’ll take my time and coming off of it thanks for your ideas
