Crispy Oven Baked Potatoes

One of my favorite things to make is potatoes. I was never obsessed with this root vegetable until a friend of mine told me once- I'm really craving potatoes! mashed, baked, fried, I want a potato! I thought it was such a weird thing at the time- usually you hear people craving a burger, or a chocolate chip cookie, but a potato? Then, a while later, I found myself remembering what she said and.....craving a potato. So there you have it-the start of a potato obsession.
These crispy baked baby reds are a super quick and easy go-to, and my are they delicious! The bottoms crispy up and turn beautifully golden so you get that crispy first bite and a soft finish. The spices are really the perfect combination..I think you'll love them like I do!

Ingredients
- 15 baby red potatoes
- 3-31/2 TBSP olive oil
- 5 garlic cloves, smashed
- 1 tsp salt
- 2 tsp onion soup mix
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/4 tsp thyme
- 1/4 tsp black pepper
Instructions
- preheat oven to 200ºc.
- scrub and dry potatoes.
- cut into halves or quarters if they are larger potatoes
- add to a baking sheet with smashed garlic, and drizzle with olive oil.
- combine spices in a small bowl and sprinkle over potatoes.
- arrange potatoes on a baking sheet fitted with parchment paper cut side down.
- bake for 30-35 minutes, until crispy on the bottoms.

You mean 392 degrees Fahrenheit
Roast at 400 - gets the job done in the same amount of time! This recipe is the real deal - it is absolutely delicious!!! BUT, if you're a "quick and dirty" fan the same instructions may be followed minus the onion soup mix, and I promise no one will object!!! The method is the brilliance, here: the potatoes (I frequently just spray with non-stick cooking spray - don't judge!), with salt, pepper, a bit of paprika for color, maybe a shake of garlic powder if you're inclined... They are crispy on the outside, super-creamy on the inside, and better than any French Fry you'll ever eat!!!
