Braised Potatoes and Veggies

Slightly sticky on the outside and soft inside, this simple and humble recipe is absolutely delicious. Braised potatoes are perfect as a side dish but in this version, I added veggies to them to serve as a vegetarian meal option.
How do You Braise Potatoes?
-Cook in butter or oil and stir continuously till they begin to turn golden
-Add stock and seasoning to taste(I used my homemade BBQ sauce)
-Add water,just enough to prevent the pan from burning(about 1 cup). Bring to boil on low heat and simmer.
-Garnish with herbs and serve.

It is highly recommended to use my homemade BBQ Sauce in this recipe. Made without ketchup or Worcestershire sauce, it tastes better than nay store bought BBQ Sauce.

Ingredients
- 1½ tbsp Olive oil
- 500 grams Potatoes
- 1 medium Onion
- 200 grams Shredded oyster mushrooms
- ½ Yellow bell pepper
- ½ Red bell pepper
- 1 cup Water
- 2 Garlic cloves
- 2 tbsp BBQ Sauce
- 1 tsp Salt
- 1 tsp Seasoning powder
- 2 cups Chopped spinach
Instructions
- To a preheated pan; add olive oil,garlic,potatoes,onion,mushrooms and BBQ Sauce. Turn continuously, till potatoes are golden on all sides. This should take approximately 5 minutes.
- Add bell peppers,seasoning powder, salt and water. Cover the pan and let it cook on high heat for 10 minutes.
- Finally, add spinach, cook for another 5minutes and then take pan off heat.
- Enjoy.
