This month has been incredibly hectic for me. I have recently graduated from medical school and I'm currently in the process of moving countries.

With the endless piles of paperwork and online forms to fill in, from visa to apartment hunting, from job search to organising moving vans, I've barely had the time to cook anything (not to mention take pictures!)


This is where mealprep comes to rescue.

Meal prepping is one of those things I do once every few months, think to myself "oh wow, that was so easy, I'm totally going to do this every week", and then forget about until next time. Having said that, I still do plan to incorporate this to my weekly routine.

This particular mealprep was 100% vegan, 100% quick and easy, and 100% delicious.

Lunchbox 1 - Soba noodles with lentil Bolognese


This must be one of the quickest meals out there, you honestly barely have to do anything and suddenly lunch is ready!

Lunchbox 2 - Cauliflower-chickpea-quinoa salad with vinaigrette


I know, you must be thinking there's no way a raw cauliflower salad is good, right? To be honest I thought so too! Until recently I was convinced the only decent way to eat cauliflower was to roast it!

This salad was surprisingly delicious. So fresh, flavourful and crunchy!

Ingredients
Lunchbox 1 - Soba noodles with lentil Bolognese
  • 1 serving soba noodles
  • 1 can (310g / 11oz) lentils
  • 1 can (400g / 14oz) basil-tomato sauce
  • 1/2 onion
  • 2 cloves garlic
  • Seasoning - 1tsp wild garlic, 1tsp marjoram, salt and pepper to taste
  • Fresh basil to garnish
Lunchbox 2 - Cauliflower-chickpea-quinoa salad with vinaigrette
  • 1/2 cauliflower
  • 1 can (310g / 11oz) chickpeas
  • 1/4 cup red quinoa
  • 1 red bell pepper
  • 5-6 cherry tomatoes
  • bunch of green olives
  • 3tbsp olive oil
  • 1tbsp white wine vinegar
  • 1/2tsp each of oregano, basil, and rosemary
Instructions
Lunchbox 1 - Soba noodles with lentil Bolognese
Boil the noodles according to instructions on the package - with soba noodles I recommend running them under cold water immediately after boiling to prevent them from sticking to each other
In a medium saucepan, heat up the tomato sauce with all the remaining ingredients and simmer for 5 minutes while the noodles boil
Divide the noodles and the sauce into two lunch boxes and garnish with fresh basil
Store in the fridge for up to 4-5 days
Lunchbox 2 - Cauliflower-chickpea-quinoa salad with vinaigrette
Cut the cauliflower into tiny florets
Boil the quinoa according to instructions on the package
Cut the bell pepper, tomatoes, and olives
In a small saucer, mix the olive oil, vinegar, and herbs
Mix all the ingredients together in a large bowl
Divide into two lunch boxes and store in the fridge for up to 4-5 days
