This month has been incredibly hectic for me. I have recently graduated from medical school and I'm currently in the process of moving countries.
With the endless piles of paperwork and online forms to fill in, from visa to apartment hunting, from job search to organising moving vans, I've barely had the time to cook anything (not to mention take pictures!)
This is where mealprep comes to rescue.
Meal prepping is one of those things I do once every few months, think to myself "oh wow, that was so easy, I'm totally going to do this every week", and then forget about until next time. Having said that, I still do plan to incorporate this to my weekly routine.
This particular mealprep was 100% vegan, 100% quick and easy, and 100% delicious.
