When I made this yummy recipe a couple of weeks ago, I was definitely not expecting it to be anything super extraordinary than a regular savory "veggie on toast" recipe. However, to my surprise, this recipe is all I need on a busy morning.
It only takes a few minutes to prepare and serve, yet brings so much joy! And if you are a fan of falafel, just as much as I am, then don't hesitate and give it a go! It isn't a substitute for falafel by any means, but a nice quick falafel-like brekkie idea for you to try!
I served it with a dash of sweet chili sauce to add a bit of spice, however, this step is completely optional so add it if you like or omit this step if you're not interested.

Ingredients
- 150g cooked chickpeas
- 70g mushrooms
- 2 slices of bread
- soft cheese
- spices: a pinch of salt and black pepper, 1-2 tbsp dried parsley, 1/2 tsp chili flakes, 1 tsp granulated garlic
- drizzle of sweet chili sauce (optional)
Instructions
- Toast your bread.
- Slice mushrooms and leave them aside.
- Mash chickpeas with a fork and throw them into a hot pan with spices, and fry for 3-4 minutes.
- At this stage, your yummy toast should be done, so spread some cream cheese, and place mashed chickpeas on top.
- Fry mushrooms with some extra chili flakes if you like and salt, and fry until soft.
- Once done, transfer onto your chickpea-loaded toast and drizzle sweet chili sauce.
- Serve and enjoy!
