When I made this yummy recipe a couple of weeks ago, I was definitely not expecting it to be anything super extraordinary than a regular savory "veggie on toast" recipe. However, to my surprise, this recipe is all I need on a busy morning.

It only takes a few minutes to prepare and serve, yet brings so much joy! And if you are a fan of falafel, just as much as I am, then don't hesitate and give it a go! It isn't a substitute for falafel by any means, but a nice quick falafel-like brekkie idea for you to try!

I served it with a dash of sweet chili sauce to add a bit of spice, however, this step is completely optional so add it if you like or omit this step if you're not interested.

Ingredients

  • 150g cooked chickpeas
  • 70g mushrooms
  • 2 slices of bread
  • soft cheese
  • spices: a pinch of salt and black pepper, 1-2 tbsp dried parsley, 1/2 tsp chili flakes, 1 tsp granulated garlic
  • drizzle of sweet chili sauce (optional)
Instructions

Toast your bread.
Slice mushrooms and leave them aside.
Mash chickpeas with a fork and throw them into a hot pan with spices, and fry for 3-4 minutes.
At this stage, your yummy toast should be done, so spread some cream cheese, and place mashed chickpeas on top.
Fry mushrooms with some extra chili flakes if you like and salt, and fry until soft.
Once done, transfer onto your chickpea-loaded toast and drizzle sweet chili sauce.
Serve and enjoy!
