If you like Middle Eastern flavors, this dish is for you! Lately I have been very inspired to create dishes where vegetables are the star. I want to show people how easy it can be to make healthy vegetables taste absolutely incredible.


I am so proud of how this dish turned out! It is gorgeous, tasty, and vegan. Best of all, you only need minimal (and extremely low cost) ingredients!


This meal can be a side dish, or a full meal in itself. You will be surprised how filling it is.


The homemade hummus is vibrant in color and full of fresh herbs. For those who are not fans of cilantro (and I know there are many of you!), just leave it out and substitute extra parsley.

Ingredients
For the Hummus
  • 1 can of chickpeas (540 ml)
  • 1/4 cup tahini
  • 1 lemon
  • 2 scallions
  • 1/4 cup cilantro
  • 1/2 cup parsley
  • 2 garlic cloves
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
For the Cauliflower and Couscous Salad
  • 1 cauliflower floret
  • 1/2 cup of couscous
  • 2 tsp salt
  • 1/2 cup of water
  • 1 tbsp olive oil
  • 1/4 cup pistachios
  • Alfalfa sprouts to garnish (optional)
Instructions
For the Hummus
Using a strainer with a bowl beneath it, empty the can of chickpeas letting the liquid (aquafaba) fill the bowl
Reserve the liquid (aquafaba) for later and rinse the strained chickpeas
Peel the shells from the chickpeas
Add the peeled chickpeas, tahini, juice from 1/2 a lemon, scallions, cilantro, parsley, cumin, salt, and aquafaba to a food processor or blender
Blend together until combined and add ice cold water to help thin it out if needed
For the Caulifower
Chop the cauliflower into florets
Place in the air fryer on 400 F for approximately 15 minutes, shaking the basket halfway.
Drizzle with olive oil and season with salt
For the Couscous
Boil water in a pot
Add the couscous and stir constantly until liquid is absorbed
Fluff with a fork
Plating
Create a bed of hummus
Top with couscous, pistachios and cauliflower
Garnish with alfalfa sprouts
Tips
  • If you don't have an air fryer, roast in the oven at 425 F for 30-45 minutes
  • Any micro-green or sprout will work for the garnish
  • Peeling the chickpeas makes for a creamier and smoother hummus consistency
