It’s the mac and cheese comfort food that everyone loves and everyone can enjoy, no matter their eating preference.
The secret...veggies! Lots of cauliflower and butternut squash that adds that cheesy color. I’m not a butternut squash fan but I will admit, this was really good.
The “macaroni” is oven roasted cauliflower florets.
And the “cheese“ is a combination of cauliflower, butternut squash and vegetable broth slowly simmered together then puréed into a creamy, golden sauce.

Ingredients
Ingredients for the “cheese”
- 1 med onion
- 2 cloves garlic
- 3 cups butternut squash - fresh or frozen
- 3 cups cauliflower florets - fresh or frozen
- 2 cups vegetable broth
- 1 Tbsp avocado oil
- 3/4 tsp Dijon mustard
Ingredients for the “mac”
- 4 cups cauliflower florets - fresh or frozen
Instructions
Instructions for the “cheese”
- Finely chop garlic, onion, cauliflower florets and butternut squash, if using fresh
- Add avocado oil to sauce pan
- On medium heat, add onion and garlic and cook until soft
- Add cauliflower florets, fresh butternut squash* and vegetable broth
- Bring to a boil
- Reduce heat, cover and simmer 15-18 minutes until cauliflower is soft
- Pour cauliflower, butternut squash and broth to a food processor
- Process until smooth and creamy
- *If using frozen butternut squash purée, follow package directions
Instructions for the “mac”
- Preheat oven to 450 degrees
- Chop cauliflower into very small florets
- Grease a baking sheet with avocado oil
- Place cauliflower onto greased baking sheet and drizzle avocado oil on top
- Roast 10 minutes stirring florets halfway through roasting
Putting it all together
- Grease a small baking dish with avocado oil
- Add roasted cauliflower florets
- Add cauliflower and butternut squash purée
- Mix together
- Bake in a 450 degree oven for 10 minutes until golden on top
Tips
- You could add peas for another level of taste and texture

Adding a couple of spoonfuls of Nutritional Yeast flakes will really give this dish the cheesy flavor it just might need
