This dish was DELICIOUS, and took only 30 minutes to make.

Spicy mexican infused roasted cauliflower pieces, on a bed of nutty brown rice. Served with some deliciously fresh avocado, corn and black beans. The combo is just delicious. All the elements you would pack into a veggie burrito but in a bowl. And the best part is its super easy to make! Served with some homemade sriracha mayo for some extra kick.


Cauliflower is such an exciting versatile vegetable that can be cooked in so many ways. By roasting It, it allows all the spices and flavours to really enhance around the florets.

Ingredients

  • 1/2 a cauliflower
  • 1/2 cup of brown rice
  • 1/2 an avocado
  • 2 spring onion
  • 1/2 tin of sweet corn and black beans
  • 1/2 tsp Paprika
  • 1 tsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp ground coriander
Instructions

Cook your brown rice for 30mins/ according to instructions on the packet
Cut your cauliflower into florets, cover in olive oil, paprika cumin and ground coriander. Bake for 25 mins at 420f tossing occasionally
Meanwhile drain your black beans & corn. Slice your spring onion and avocado.
Assemble all elements into a bowl to serve.
