Turkey Burrito Bowl

The last few weeks we have been very different from our normal routines. One of the things we miss the most is the sporadic trip to Chipotle or our favorite taco place in Baltimore, Clavel. While we are trying to support our local restaurants we have definitely limited how much we eat out and definitely not on a whim like we use to. Instead we are cooking a lot of our restaurants at home in our own kitchen.


Burrito bowls are something that is so easy to recreate at home. Most of the ingredients you probably already have in your kitchen. We most definitely support ordering delivery or safe take-out from your local favorites, this is something you can make at home.


We chose ground turkey to keep this meal on the leaner side. However, feel free to substitute with ground beef or any other protein you are in the mood for. In addition, we were in the refried beans mood when we made this but my Chipotle favorite is their black beans. Add some cheese and sour cream to really get this burrito bowl party started. One of my Chipotle favorite’s is the  guacamole. Try ours out and let us know what you think!


Think of this as your own Chipotle or taco bar. Whatever you normally get or add to your burrito bowl try it out with this. Your kitchen is now the Mexican hotspot of the town. And what kind of burrito/taco night is it without some margaritas. We’ll have to add our go-to recipe for those soon. Phillip was a bartender for years so I put him to the test often for some yummy margs!

Ingredients

Ground Turkey

  • 1 ½ lb ground turkey
  • ½ tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ jalapeno chopped

Peppers & Onions

  • ½ red pepper sliced
  • ½ yellow pepper sliced
  • ½ yellow onion sliced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper

Guacamole

  • 3 avocados
  • ½ cup red onion chopped
  • ¼ cup tomatoes with seeds removed and chopped
  • ½ jalapeno chopped
  • 3 cloves garlic minced
  • ¼ cup cilantro chopped
  • 1 lime
  • 1 tsp salt
  • 1 tsp pepper

Other Add Ons

  • 1 can refried beans
  • 2 cup white or brown rice
  • 4 cups beef broth

Instructions

Rice

In pot add beef broth and rice and cook

Ground Turkey

In a large skillet add ground turkey and break up
Add in seasonings and jalapeños to the the ground turkey and cook
Once turkey is cooked drain the grease

Peppers & Onions

In a saute pan add olive oil and bring to medium/high heat
Add peppers, onions, salt, and pepper and saute until the veggies are wilted and charred
Take pan off heat and set aside

Guacamole

Chop all veggies and add to a mixing bowl
Scoop in avocados and add salt and pepper. Squeeze lime juice into bowl
Mix to the chunkiness of your liking

Beans

Add refried beans to a bowl and mix until hot

Constructing your Burrito Bowl

Add rice to the bottom of the bowl
Top with turkey mixture, guacamole, refried beans, peppers & onions
Garnish with cilantro and additional jalapeños as desired. Squeeze lime on top!
