Maple Glazed Roasted Carrots

These beautiful Maple Glazed Roasted Carrots are a perfect mix of slightly sweet and savory - and one of the easiest vegetable side dishes ever! You simply wash your carrots, peel, toss them in a baking dish, drizzle with olive oil and maple syrup, and toss with a little salt, pepper and herbs. Then, the carrots are baked for 25 minutes. For a perfect fall touch, you can sprinkle with a little fresh parsley and toasted pumpkin seeds. And Voila! your carrots are ready to serve.


Rainbow carrots are extra beautiful, but you can certainly use any carrots. We grew these beautiful carrots in our garden. My little girls' favorites are the purple carrots!

Ingredients

  •  16 oz. peeled whole carrots
  •  2 tablespoons extra virgin olive oil
  •  2 tablespoons maple syrup
  •  salt and pepper, to taste
  •  leaves from 4 sprigs fresh thyme
  •  1/4 cup chopped parsley
Instructions

Preheat the oven to 400°F. Place the carrots into a baking dish or large rimmed sheet pan. Drizzle with olive oil and maple syrup. Season with salt and pepper and sprinkle with thyme leaves. Toss well to coat evenly. Roast in the oven until fork tender, about 20-30 minutes, depending on thickness of the carrots. Add more salt and pepper to taste, if desired, and garnish with fresh parsley. Enjoy warm.
