These beautiful Maple Glazed Roasted Carrots are a perfect mix of slightly sweet and savory - and one of the easiest vegetable side dishes ever! You simply wash your carrots, peel, toss them in a baking dish, drizzle with olive oil and maple syrup, and toss with a little salt, pepper and herbs. Then, the carrots are baked for 25 minutes. For a perfect fall touch, you can sprinkle with a little fresh parsley and toasted pumpkin seeds. And Voila! your carrots are ready to serve.

Rainbow carrots are extra beautiful, but you can certainly use any carrots. We grew these beautiful carrots in our garden. My little girls' favorites are the purple carrots!

Delicious and sweet - and best of all, so easy!

Fresh baby rainbow carrots from the garden!

Or you can use fresh plain orange carrots!

Delicious and maple Glazed carrots!
