Simple Broccoli Salad

This past Easter weekend brought about multiple family gatherings in which I was asked to bring a dish to. This broccoli salad is a family favorite. I get asked over and over again to make it and this weekend was no different.


The good news is that it is cheap, easy, and quick to make. It is the perfect spring/summer side dish to take to any cookout or barbeque as it pairs well with hamburgers, barbeque chicken or pork, and steaks.


The cheese and bacon give the salad a savory flavor while the creamy dressing provides a sweet touch. I like to make it up ahead of time so the flavors really get a chance to incorporate together.

Broccoli salad is a perfect side dish to any lunch or dinner, and is a super simple dish to take to any potluck.

Mix raw broccoli florets, shredded cheddar cheese and crumbled bacon in a large bowl.

Whisk the mayonnaise, apple cider vinegar and sugar together in a small bowl before pouring on the broccoli.

Stir the dressing in with the broccoli, cheese, and bacon mixture and chill in the refrigerator until ready to serve.

Ingredients

  • 2, 16oz bags of pre-cut broccoli florets (8 cups raw, cut broccoli)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2lb bacon, cooked and crumbled (may use turkey bacon to reduce fat)
  • 11/4 cup light mayonnaise
  • 1/3 cup sugar
  • 1/3 cup apple cider vinegar
  • salt and pepper to taste
Instructions

Mix broccoli, cheese, and crumbled bacon in a large bowl.
Whisk together mayonnaise, apple cider vinegar, and sugar together in a small bowl and season with salt and pepper.
Pour the dressing over the broccoli mixture and stir to combine.
Store in refrigerator until ready to serve.
Tips
  • Make the bacon ahead of time and keep crumbled bacon in a air tight container in refrigerator until ready to use.
  • Buy pre-cut, bagged broccoli florets.
  • Make up the dressing ahead of time.
  • Make 1-2hrs ahead of time and store in the refrigerator to allow the flavors to really incorporate together.

    This will be a five star recipe if you add chopped cauliflower and green onions!

    This is fabulous - but I added sunflower seeds, too. They make this in our local Super One grocery deli and it's so expensive. Nice to have it at home and be able to eat it all yourself!
