Black Bean Burrito Bowl Casserole

I love a good classic burrito bowl, but sometimes I need a shortcut and that is why I love this casserole so much! This uses just a handful of kitchen and pantry staples you probably already have! Everything is baked in the same dish, and it is so easy to customize it to suit your tastes. Healthy doesn't have to be boring; it doesn't get much tastier than this!

This casserole is the best! It has lots of flavor from the chili tomatoes, you can top it with your favorite toppings and sauce (I like spicy ranch or taco sauce) and you can make it up the night before and then pop it in the oven when you are ready to bake!

Serve in a bowl with some avocado, lettuce, jalepeno, spicy ranch and sour cream for the ultimate healthy comfort food! I will be eating this and cheesy veggie tortellini bake on repeat this winter.
