Tofu Stirfry
With the rise in plant based diets, tofu and other non-meat alternatives have become quite popular. I grew up eating tofu so it was never weird or strange for me. On the contrary, my mom often made tofu dishes that were so good that I would ask for them quite often. If you’ve never had tofu before, it comes in a variety of firmness levels. The level of firmness really depends on what you are using the tofu for. Soft or silken tofu is best eaten sweet but also works in savory dishes. You just have to remember not to cook it to death. Firm tofu is best for stir frying as it holds together better.
In my tofu stirfry recipe, I use firm or extra firm tofu. I press it to drain out some of the water and then cook it in the air fryer to further dry it out and improve its texture. The result is a meatier texture which holds its shape and soaks up the stir fry sauce. I hope you enjoy this dish!

- 1 tbsp dark soy sauce
- 1 tsp sugar
- 1/4 tsp white pepper
- 2 tbsps cooking oil

Cooking
- In a large sauté pan, heat on high. Add in your cooking oil and then the garlic and ginger. Stir fry for 30 seconds until fragrant. Add in the carrots and stir fry for 1 minute and then add in the bok choy and tofu. Stir fry for 1 minute and then add in the rest of the ingredients. Stir fry for another minute until the sauce is soaked up and the tofu and vegetables are well coated with the sauce. Serve hot with rice.

Good recipe but I have no air-fryer - no counter space. Conventional instructions would be nice.
