Easy Mapo Tofu, Hash Browns and Eggs

I've always been a bit fascinated by tofu. I always thought of it as this exotic ingredient that was either just for vegetarians or was for far east cooking. I didn't really understand just how versatile and amazing a material it can be. I also love spicy food, the spicier it is, the better as far as I'm concerned. However it's also got to have a big hit of flavour and that's where mapo tofu was suggested to me. It's a wonderfully tasty spicy dish and I thought it would be perfect for a brunch dish. It hit me like a tonne of bricks, make it into a tasty meal with hash browns and an egg. And thus, it was born! My version, not authentic but tasty
Easy Mapo Tofu, Hash Browns and Eggs
Recipe details
Ingredients
Mapo tofu
- 450g Tofu (firm)
- 1 tablespoon (heaped) Gochujang
- 250ml Veg stock
- 10g Gochugaru
- 15ml Fish sauce
- 1 teaspoon Cornflour
- 1 clove Garlic
- 100ml Blackbean sauce
- 5 spring onions
Hash brown
- 2 potatoes, Maris Piper recommended.
- Knob of butter
Fried eggs
- 4 eggs
- 50g lard
Instructions
For the tofu
- Heat oil in a wok, get it smoking hot and add garlic and keep moving, add spring onions until fragrant then add tofu and allow to brown.
- Once brown add gochujang until fragrant and stir to coat tofu.
- Add everything else except cornflour. And bring to low simmer
- Mix cornflour and water into paste and then add once tofu is simmering.
- Leave to one side until hash browns made
Hash browns
- Peel and grate potatoes on a box grater
- Add butter to pan and leave to foam
- Place potatoes to pan and flatten
- Do not touch until you see browning at the edges and then flip
- Allow to crisp on both sides
- Cut into 4 quarters and place onto plates
Eggs
- Heat lard in shallow skillet
- Add eggs individually and cook until firm whites but soft yolks
Assembly
- Place hash brown quarter onto plate
- Add quarter of mapo tofu mixture
- Place fried egg on top
Tips
- You can remove fish sauce and eggs to turn into vegan meal
