Pistachio Pudding Cool Whip Salad

Here is one of my favorite side dishes to bring to a summer pot-luck - Pistachio Pudding Cool Whip Salad!

I remember as a child and teenager loving it when someone made a "salad" like this and brought it to picnics. I remember soon after I got out of college, and had to cook for myself, I decided I had to figure out how to make it myself. I was so super excited when I found out how simple it is to make.

You only need 5 Ingredients to make this Pistachio Cool Whip Salad!

  • 1 4 oz pistachio Jell-O instant pudding mix
  • 1 20 oz can crushed pineapple
  • 1 10 oz package of mini-marshmallows
  • 2.25 oz Diamond of California chopped nuts (your favorite - I use pecans or walnuts)
  • 1 8 oz container Cool Whip (I used lite) - thawed


How Do You Make Pistachio Pudding Salad?

Mix together the pistachio pudding mix, crushed pineapples, chopped nuts, and cool whip until well mixed.

Fold in the marshmallows - a half of a bag at a time.

Chill and serve cold!

Ingredients

  • 1 4 oz pistachio Jell-O instant pudding mix

Instructions

Tips
  • It tastes better if you make it a day in advance so that the marshmallows have time to soak up the pineapple juice!
