These Thai-inspired sweetcorn fritters have become a staple for my work-from-home lunches. With just a quick blend of ingredients, they're ready in a flash – taking barely 5 minutes to cook in a non-stick frying pan. I opt for panang paste, but red Thai curry paste is an equally delicious substitute. Unlike traditional deep-fried fritters, these are lightly cooked with a touch of oil for a healthier option. For a vegetarian version, simply omit the fish sauce. I enjoy them best with a squeeze of lime and a dip in sweet chili sauce. They're a delightful blend of Thai flavors that never disappoint!

Ingredients

  • 1 Cup / 1 Can of Sweetcorn, drained (around 280g grams)
  • 2 eggs
  • 2/3 All Purpose Flour (100g Plain Flour)
  • 1 TBSP Panang Paste
  • 1 TBSP Fish Sauce
  • Spring Onion, chopped (optional)
Instructions

Put 2/3 of sweetcorn and all of the other ingredients in a blender and pulse to a paste, then stir in the rest of sweetcorn kernels
Put a frying pan on a medium heat and cover the bottom with a neutral tasting oil. Spoon the batter into roughly 8cm circles in the frying pan, then leave for 2-3 minutes until golden, before flipping and cooking the other side.
Serve immediately with some dipping sauce!
