Mango Parfaits

Have you made any desserts in a jar? Here's a great dessert idea for summer! You can serve these cool, creamy, and fruity parfaits in small canning jars or any uniquely-shaped jars you may have…I’m always saving jars from jams, relishes, and other items because they’re just too pretty not to use!

This dessert is on the healthier side, made with Greek yogurt and pureed and sliced, peeled mangos (you can also cut the mangos into chunks instead of slices). The mangos are sweetened with a little sugar or honey and tossed with a sprinkle of ground cardamom.

You can also top these parfaits with a sprinkle of your favorite granola cereal. If you find that this parfait is not sweet enough to your liking, you can even drizzle some honey or maple syrup over the top of each parfait—I think it’s great either way!

  • 3 mangos, peeled and sliced or cut into chunks, divided
  • 2 Tablespoons granulated sugar or 1 Tablespoon honey
  • 1/2 teaspoon ground cardamom
  • 2 cups Greek-style vanilla yogurt (or try other flavors like coconut, orange, banana, or raspberry)
  • Optional: some of your favorite granola cereal, for garnish
  • Optional: additional honey or maple syrup for drizzling on top (about 1/2 to 1 Tablespoon per parfait)

In a food processor or blender, puree the slices or chunks of 2 of the mangos with the sugar or honey (or 2/3 of the total amount of slices or chunks).
Place remaining slices or chunks from the third mango in a small bowl. Sprinkle with cardamom and toss gently. Set aside.
Spoon 2 Tablespoons mango puree into the bottom of each jar. Cover with 1/4 cup yogurt. Repeat.
When ready to serve, garnish with reserved mango slices or chunks. If desired, garnish with a sprinkle of granola cereal on top and/or drizzle with some honey or maple syrup.
