This is a fantastic healthy lunch to meal prep. You can wrap it in lettuce wraps, add to a sandwich, add it to salads, etc. I made a double batch and used it throughout the week for multiple meals.


This recipe has healthy fats and protein making it a great post-workout snack. You can eat it during the summer or during the winter, or anytime. I recently went to a store and bought curry chicken salad for $7 and it was only good for 2 servings so this recipe is a much better bang for your buck.

Ingredients
Curry Chicken Salad
  • 1 lb cooked shredded chicken
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup diced grapes
  • 1/4 cup diced celery
  • 1/4 cup chopped Cashews
  • 2 tbsp curry powder (add more if needed)
Instructions
Curry Chicken Salad
In a large mixing bowl, mix all ingredients together
If shredded chicken is not on hand, cook raw chicken breast in a crockpot on high for 3-4 hours then place in fridge to cook. Once cooled, take 2 forks and start shredding apart.
Tips
  • If mixture is too dry, add more yogurt and mayonnaise
  • If mixture is too wet, add more chicken or curry powder
  • If curry powder is not on hand, add yellow curry sauce (1/4 cup) for rich flavor
