Chocolate Dipped Peanut Butter Cookies
These cookies are easy to make and fun to display. Who doesn't like peanut butter and chocolate together. They are crunchy on the outside but slightly creamy on the inside. You can make a double batch of these as I should have the first time. They got eaten so fast. As with most cookies you beat the butter and sugar together until creamy. Add in the egg and mix throughly. Sift all of the dry ingredients together and add to the peanut butter mixture. Add in the vanilla and mix. Using a tablespoon get the dough and roll into a ball and roll in the sugar. Using a fork do a cross hatch if you like. Bake for 5 to 8 minutes or until golden brown. Make sure to cool them completely and then dip them in your melted chocolate. Let them cool until hardened. These make such a pretty display on a plate also along with tasting so good.

- 1/2 c unsalted butter
- 1 c light brown sugar
- 1 egg
- 2 t vanilla extract
- 3/4 c peanut butter
- 1 1/2 c all purpose flour
- 3/4 t baking soda
- 1/2 c sugar for rolling the dough in
- 1/2 block of your choice of chocolate for dipping
Instructions
For the cookies
- Heat the oven to 350 degrees
- Cream the butter and brown sugar together
- Add egg and mix together
- Sift together dry ingredients
- Add to peanut butter mixture along with vanilla extract
- By tablespoons full get the dough and roll into a ball and dip in the granulated sugar
- Put onto parchment lined pan
- Cross hatch with a fork
- Bake for 5-8 minutes until golden
- Cool completely
- Melt chocolate and dip in chocolate half way
- Cool until hardened.
