Okay so I like making quick meals out of pre-made items I buy at the store. This time I'm turning 1 can of creamy mushroom soup into a 2 person stew! This stew is hearty and savory and it will have you wanting more. Did I mention this is also vegetarian. Ready?! Let's do this!

These are the starter ingredients I used to make this 2 person stew. If you are veggie lover like me, you are going to love this meal! No meat required.

After sauteing the first few ingredients, I add in my frozen spinach. Look at that frozen smoke!icon

I add in the can of Creamy Mushroom soup. This is the only liquid I add in. It keeps the stew thick.

This is a super hearty and fulfilling meal. I love love love all the veggies! This would even work as a dip with pita chips! I would even serve this as a side dish and maybe omit the potatoes then have mashed potatoes or rice with some meat. You could even stuff some chicken with this...possibilities are endless! icon I hope you enjoyed this recipe and don't ever be afraid to add in more ingredients to a pre-made meal. It may just make it even better! Follow me on my other Social Media channels for more delicious recipes, tips and tricks!
