Okay so I like making quick meals out of pre-made items I buy at the store. This time I'm turning 1 can of creamy mushroom soup into a 2 person stew! This stew is hearty and savory and it will have you wanting more. Did I mention this is also vegetarian. Ready?! Let's do this!

These are the starter ingredients I used to make this 2 person stew. If you are veggie lover like me, you are going to love this meal! No meat required.

After sauteing the first few ingredients, I add in my frozen spinach. Look at that frozen smoke!icon

I add in the can of Creamy Mushroom soup. This is the only liquid I add in. It keeps the stew thick.

This is a super hearty and fulfilling meal. I love love love all the veggies! This would even work as a dip with pita chips! I would even serve this as a side dish and maybe omit the potatoes then have mashed potatoes or rice with some meat. Ingredients

  • 2 small potatoes, diced

  • 3 medium sized baby bella mushrooms, diced

  • 1/4 cup red onion, diced

  • 4 cloves of garlic, diced

  • Cooking spray

  • 1 can Creamy Mushroom Soup

  • 1 cup frozen chopped spinach

  • salt & pepper
Instructions

Spray a medium sized pot with non-stick cooking spray and heat to medium heat. Add in potatoes and sauté for 3 minutes. Add in onions and sauté 1 minute. Add in mushrooms and garlic and sauté for 2 minutes. Add in frozen spinach and sauté 1 minute. Add in salt and pepper, about 1/4 tsp of salt and 1/2 tsp of pepper.

Turn down heat to low and add in 1 can of soup and stir. Let simmer until it starts to bubble. Remove from the heat and serve in a bowl. A side of garlic bread would be delicious to dip in! Enjoy!
Tips
  • For a thinner soup consistency, add in 1/4 cup vegetable stock or chicken stock until you get to the right consistency.
  • For an herbier soup, add i some thyme, oregano or rosemary to taste.
  • For a spicier soup, sprinkle in cayenne!
