Easy Harvest Soup

I love root vegetables and making soup with them. This is an easy recipe that you can cook on the stove or in your crockpot. You can see more of my crazy creations here

INGREDIENTS

  • 3 cans vegetable broth
  • 1 small onion
  • 1 cup carrots, peeled & sliced
  • 1 celery stock – sliced
  • 1 baking potato
  • 1 cup 1/2 and 1/2
  • 1/4 cup greek yogurt
  • Salt and pepper to taste

INSTRUCTIONS

  1. Cut up your vegetables.
  2. Place chicken broth, onion, and veggies into slow cooker.
  3. Cook on low all day (8 hours or until veggies are tender).
  4. When the veggies are tender – use your wand blender or regular blender to puree the veggies into the soup.
  5. It should be nice and smooth after blending and if your veggies happen to be a little crunchy still – give them a little more time to cook. They’ll cook faster the smaller they are.
  6. Add your 1/2 & 1/2 and greek yogurt. You can either blend it or stir it in.
