This delicious recipe for baked potato soup is a comfort food must-have. The from-scratch ingredients combine perfectly to become everyone’s favorite soup recipe.

Once the weather turns cold, my favorite meal consists of a hearty homemade soup, a simple vinaigrette salad and some bread! This simple soup recipe has always been one of my family’s favorite comfort foods on a cold, wintry, night. It’s mild flavor is also a great one to bring to new moms or meal train recipients because everyone loves it! Definitely give this Delicious Loaded Baked Potato Soup recipe a try!

Prep Soup Ingredients Ahead of Time

If you prep the ingredients ahead of time, this soup can come together quite quickly. I like to use red potatoes and leave the skin on for this recipe, but you could also use russet potatoes and take the skin off after they’re baked.

I also love to cook bacon in the oven. It’s so much less mess and work! The greasy foil lining can easily be tossed in the garbage after the fat has hardened.

Soup Ingredients

2/3 cup butter

2/3 cup flour

7 cups milk + (optional) 2 cups milk

4 cups potatoes, baked, cooled, and cubed ( I use red with the skins on)

4 green onions, chopped

12 bacon strips, cooked and crumbled

1 1/4 cups shredded cheddar cheese

1 cup sour cream


Directions

  1. Bake potatoes ahead of time. (poke, cook in oven 400 degrees for 45 minutes). Cook bacon (400 oven for 15 minutes on foil-lined sheet)
  2. Once all your ingredients are chopped and ready, melt butter in stockpot. Whisk in flour until smooth.
  3. Add 7 cups of milk, stir over medium heat until thickened. (About 10 minutes)
  4. Add potatoes and onions and bring to a boil, stirring constantly so it won’t stick to bottom of pan.
  5. Reduce heat and simmer for 10 minutes.
  6. Add bacon, cheddar cheese and sour cream and stir to melt. Add salt and pepper to taste.
  7. If soup seems too thick, add remaining 2 cups of milk and heat through.
