Homemade Chicken Noodle Soup for the Soul That Kiddos Will Love

I personally HATE canned soup, especially anything with meat in it. But when the kiddos are sick what's better then some chicken noodle? Luckily this one is easy and oh so good.
First thing, boil water! I actually boil the water twice. The first time I boil with chicken breast chicken dump the water completely.
The second boil, I dice the chicken first and skim the top. I also use bottle water the 2nd time around.
I use chicken breast.
This time I also add spices. Salt, bay leaves, onion powder.
I also add 2 stalks of celery, half of and onion (not chopped, you will see why later).
I also add a TON of carrots because my little one loves cooked carrots in soup. Then I simmer on low heat for 2 hours.
After 2 hours, I add a bushel of dill and let it boil and then I remove the dill.
The reason I do this is because the dill give the soup SO much flavor but after about 5 minutes it starts to break apart and my kids are picky about green things floating in their soup.
I also remove the celery and onion at this point for the same reason but if you like it keep it in!
Then I add a cup of noodles and cook for another 20 min until they are tender.
The chicken is so tender at this point.
Perfect for curing the little kiddos form the biweekly virus, or just a yummy dinner!

Ingredients
- 2 chicken breasts
- 2 stalks of celery
- 5 large carrots
- 1/2 onion (not chopped)
- a few stems of dill
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 2 bay leaves
- 1 cup noodles
Instructions
- boil the chicken breast then dump the water
- chop chicken and put in clean water and boil again
- skim the top
- add chopped carrots, whole celery and half and onion (not chopped)
- add salt, bay leaves and onion powder
- simmer for 2 hours on low
- add dill and boil again
- remove dill, celery and onion
- add cup of noodles
- simmer for another 20 minutes
