Chicken Artichoke Soup Recipe

I’m a fan of artichokes and chicken. So, this recipe shares my love of chicken and artichoke into a soup. This chicken artichoke soup recipe uses a slow cooker and is easy for a weeknight dinner. This recipe makes 6 servings in the slow cooker. Read on and try today!

Here is a photo of all the ingredients. Prepping them ahead of time made for an easy assembly.

Cut up the carrots into ½-inch pieces. Then, chop the red onion and set both aside.

Rinse the cannellini beans and set aside. Chop up the canned artichokes and set them aside.

Add all the cut ingredients, tomato sauce, diced tomatoes, chicken thighs, and broth to the slow cooker.


Add the parsley, basil, salt, and pepper and stir. Set to high and cook for 5 hours.

Before serving, chop up the pieces of cooked chicken thighs and add them to the soup.

And here is the finished chicken artichoke soup recipe that I enjoyed! The variety of ingredients in the soup makes it a complete meal. The dish can be stored in the refrigerator for 3 days.

Ingredients

  • 1 lb of boneless skinless chicken thighs
  • 1 can of cannellini beans - rinsed
  • ⅔ cup of baby carrots cut into half-inch pieces
  • 1 small red onion - chopped
  • ½ cup of tomato sauce
  • 1 - 16 oz diced tomatoes
  • 1 - 16 oz can of artichokes - chopped
  • 4 cups of chicken broth or bone broth
  • 1 tablespoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon granulated garlic
  • 1 teaspoon salt
  • ½ teaspoon pepper
