This easy taco soup recipe can be made in just 25 minutes! Packed with flavor and simple ingredients, it’s the perfect meal for a busy weeknight.

Easy Taco Soup in 25 Minutes | Gathered In The Kitchen

I love quick and easy meals, especially for busy weeknights! Between everyone’s activities, I need things that are healthy and tasty! This taco soup definitely checked all of the boxes! I personally LOVED it! … and to think, I just whipped it up from some ingredients I had in the kitchen!


Ingredients


  • ground beef – 85% – 90% fat is best!
  • red onion – peeled and diced
  • green pepper – deseeded and diced
  • canned corn – whole kernel sweet corn
  • canned lentils – using canned lentils helps speed up the cooking process – dried lentils would need to soak and take a longer time to cook
  • canned diced tomatoes – I prefer petite diced tomatoes so you don’t have huge chunks of tomatoes
  • taco seasoning – rather than buying the taco seasoning packets, you can purchase large seasoning containers of taco seasoning, or better yet, make your own with my homemade taco seasoning packet recipe
  • chicken broth – canned or boxed, either broth works fine!
  • cheddar cheese – I prefer finely shredded cheddar cheese. You could also do a Mexican or taco seasoned cheese if your local grocery store has it
  • sour cream – full fat sour cream is best
  • cilantro – fresh cilantro, washed and chopped

Ingredients

  • 1/2 lb ground beef
  • 1/4 c red onion
  • 1/2 whole green pepper
  • 1 can canned sweet corn drained
  • 1 can lentils drained
  • 3 tbs taco seasoning
  • 48 oz chicken broth
  • cheddar cheese
  • sour cream
  • cilantro
Instructions

In a large dutch oven, brown ground beef
Add diced onions and green peppers. Sauté for 2 minutes
Add taco seasoning and stir
Add drained corn and lentils
Cover and bring to a boil. Then reduce to a simmer for 20 minutes
Serve topped with shredded cheddar cheese, a dollop of sour cream and a sprig of cilantro
