Slow Cooker Bean and Bacon Soup

As long as you use a gluten-free chicken bouillon or chicken broth, this soup recipe is naturally gluten free. We like to serve our carbs on the side (like dinner rolls or breadsticks) so everyone can control their portions.
But it would be easy to add potatoes, rice or noodles to this soup to make it even heartier. For rice and noodles, cook them separately on the stovetop and add in at the end of slow cooking. For potatoes, you can add them at the beginning as long as they're in large pieces (otherwise they'll get too mushy).

Ingredients
- ½ lb bacon, cut into 1 inch pieces
- 3 (15.5oz) cans northern beans
- ½ cup celery, diced
- ½ cup onion, diced
- 1 cup carrots, diced
- salt and pepper
- 2 cloves garlic, minced
- 4 cups chicken broth
Instructions
- Add cut bacon to a skillet and cook over medium heat, until done, stirring the bacon often. Transfer to a paper towel-lined plate to allow the grease to absorb.
- Add all of the ingredients to the crockpot.
- Cook on Low for 6-8 hours.
Tips
- This can be made on the stove top instead. Just add everything to a stockpot as directed and heat over medium heat for about 1 hour.
