Instant Pot Beef Stew

This week might meal is a favorite in my home and perfect for those cool autumn nights when you are craving something warm and hearty. Stewing beef is cooked in the crock pot with onions, carrots, potatoes and spices and can be whipped up in less

than an hour.

2 pounds stewing beef

1 pound baby carrots

4 medium potatoes peeled and chopped

1 large can of seasoned tomatoes

1 medium onion chopped

2 tablespoons of olive oil

salt and pepper

to taste.

2 tablespoons Trader Joe’s Green Goddess Seasoning mix.

Place two pounds of stewing beef in the instant pot and program the sautée setting.

Add one chopped medium white onion, two tablespoons of olive oil and a dash of salt and pepper. Stir as the meat browns and the onions caramelize.

Add one 16 oz can of seasoned diced tomatoes, 1 pound of baby carrots and 4 medium russet potatoes that have been peeled and chopped. Add one cup of water to the pot. Sprinkle on Trader Joe’s Green Goddess seasoning mix.

Set Instant pot to pressure cook for 40 minutes. After the times goes off and pressure is released serve in bowls. Serves 4. Add extra salt and pepper or seasoning mix to taste.

  • 2 tablespoons olive oil

Instructions
Instant Pot Instructions
Place meat and onion in pot. Set to sautee and add olive oil and salt and pepper. Cook until meat is brown.
Add tomatoes, potatoes, carrots and one cup of water to the pot.
Place on lid and set to cook for 40 minutes.
Release the pressure after the timer has gone off.
Serves 4
Tips
  • Swap water in the pressure cooker for red wine for more flavor.
