When summer arrives, my first go to food is salad. Fells so light sand fresh.

Our family’s favorite classic tomato- lettuce salad just got better with the addition of avocado, a light and flavorful lemon dressing and the freshness of cilantro. Easy, excellent avocado salad. My husband and I ate this entire batch of salad with avocado in one sitting. LOL


Lately I have been eating a lot of junk food, I am happy that with this quick and flavourful food my mind and body is happy .icon

Ingredients
For the Salad
  • 1 tablespoon lemon juice
  • 2 medium avocados, peeled/cubed
  • 1 package lettuce cut into half
  • 5 cherry tomatoes, chopped/ raw
  • 1/2 cup chopped red onion- optional
  • 1/4 cup chopped walnuts
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup croutons
  • Microgreens handful/1 Cup
Instructions

In a serving bowl, combine salad greens, tomatoes, onion, walnuts and avocados
Mix all the ingredients into one box and stir well
Only prepare when ready to eat!
