Are you looking for a new healthy salad recipe to add to the menu this week? This kale and watermelon salad is packed is flavor-packed and so refreshing. Throw some kale on the bowl add, cube up some watermelon, and ta daaa. It’s easy and a great healthy lunch/dinner option for the week!
One of my favorite salads of all time for the summer. I love kale and it's the most healthiest! Twisting the salad by adding Watermelon. My Hubby tell me nooo don't add it, but trust me after a spoon he couldn't stop

Kale and Watermelon Salad
Recipe details
Ingredients
- 1 bunch of green kale
- 2 cups diced seedless watermelon
- 1 tbsp pumpkin seeds
- 1 tbsp sunflower seeds
- 1 Beetroot sliced
- 3 tbsp. extra virgin olive oil
- 3 tbsp. balsamic vinegar(optional)
- 1.5 cups diced cucumber, peeled
- 3 tbsp. fresh lemon juice
- 1 cup Croutons
- Handful freshly chopped basil
- Salt, to taste
- Black pepper, to taste
Instructions
- Remove kale from stem (discard the stem) and chop into small, bite sized pieces. Whisk all of the ingredients together in a bowl.
- In a bowl, combine the chopped kale with the olive oil, lemon juice. Toss to coat evenly. Season with salt and pepper, to taste, and toss to coat once more.
- Add the remaining ingredients on top of the kale salad.
- Now add diced seedless watermelon
- Serve as is or toss once more so that all ingredients are evenly distributed in the salad.
- Enjoy!
Tips
- Add ready available dressings to avoid making your won.
