  • 6 cups cubed watermelon
  • 1/2 cup sliced red or white onion (optional)
  • 1/2 cup feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 1 tbsp lemon zest
  • 2 to 3 tbsp fresh lemon juice
  • 3 to 4 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Prep the watermelon, red onion, mint leaves and set aside.
In a large mixing bowl, add the lemon zest, lemon juice and olive oil. Whisk until combined, then add salt and pepper.
Add the watermelon, red onion and mint leaves and combine well together.
Add the feta cheese and gently toss in together.
Taste for seasoning. Feel free to add more salt and/or pepper if needed.
Ready to serve!
  • Make sure to serve chilled.
