Watermelon Feta Salad
Recipe details
Ingredients
- 6 cups cubed watermelon
- 1/2 cup sliced red or white onion (optional)
- 1/2 cup feta cheese
- 1/4 cup fresh mint leaves, chopped
- 1 tbsp lemon zest
- 2 to 3 tbsp fresh lemon juice
- 3 to 4 tbsp olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Prep the watermelon, red onion, mint leaves and set aside.
- In a large mixing bowl, add the lemon zest, lemon juice and olive oil. Whisk until combined, then add salt and pepper.
- Add the watermelon, red onion and mint leaves and combine well together.
- Add the feta cheese and gently toss in together.
- Taste for seasoning. Feel free to add more salt and/or pepper if needed.
- Ready to serve!
Tips
- Make sure to serve chilled.
