Fall is in the air... lots of baking and comforting dishes. But you can also make salads with all the fall flavors. This salad has only 5 ingredients, is delicious and you can serve it warm or cold.


The apple cider vinaigrette is tangy and sweet, just the perfect addition to combine all the fall flavors in just one bite.


All you need is these 5 simple ingredients:

  • chicken breast
  • 1 bag of kale mix green salad ( Trader Joe's)
  • Fall seasoning mix
  • Sweet potato croutons
  • Apple Cider Dijon vinaigrette


For this recipe I decide to toss the kale green mix in the pan for a few minutes and serve it warm. Some extra toppings you can add to elevate the plating are pumpkin seeds and pomegranate seeds.

Ingredients
5-ingredients- Fall Flare Warm Chicken Salad
  • 5- ingredients! 
  • 2 chicken breast 
  • 1 bag of  TJ’s greens mix 
  • 1 sweet potato 
  • Fall seasoning mix: salt, cayenne pepper, cinnamon, paprika, turmeric, garlic powder  
  • Dressing: apple cider vinaigrette 
  • 2 TBSP of apple cider vinegar
  • 1 TBSP of dijon mustard
  • 1/2 TBSP of extra virgin olive oil
  • 1 tbsp of maple syrup
  • salt and pepper to taste
Instructions

Pad dry chicken breast and drizzle avocado oil so that seasoning mix stick to the chicken. Let it marinade for at least 1 hour or overnight. 
In a hot cast iron pan, seared the chicken for about 3 minutes each side then finish cooking in the oven at 350 degrees for 10 minutes or until is cooked through.
Peel and cut the sweet potato into small cubes to make the croutons. You can either air fry or cook it on  stove top until golden brown and crispy.  
Finally, in a hot cast iron pan warm the the greens for about 2 minutes. 
How to Dishplay it? In a platter a layer of the greens, sliced chicken , top off with sweet potato croutons and drizzle with Apple cider vinegar dressing.

Tips
  • This salad is perfect and delicious .... you may add roasted pumpkin seeds and pomegranate seed for extra crunch and color.
